Ingredients

Chocolate ice cream base
  • 1 cup chocolate milk or use milk plus 2 tablespoons cocoa
  • 2 tbsp cocoa used only if you start with milk instead of chocolate milk
  • 0.5 cup heavy cream
  • 2 tbsp sugar
  • 1 tbsp cream cheese softened
  • 1 tsp vanilla extract
  • 0.25 tsp salt
S'mores mix-ins
  • 0.25 cup mini marshmallows lightly toasted
  • 3 graham crackers crushed

Equipment

  • 1 Ninja Creami

Method

Blend and freeze the base
  1. Blend chocolate milk (or milk plus cocoa), heavy cream, sugar, cream cheese, vanilla extract, and salt until completely smooth. Scrape down the container as needed so there are no visible cream cheese lumps.
  2. Pour the mixture into the Ninja Creami pint container, level the top, and freeze for 24 hours. The surface should look fully set with no liquid pockets before processing.
Process and add mix-ins
  1. Process on the Ice Cream setting. If the texture looks too thick to mix through cleanly, re-spin with 1 tablespoon milk.
  2. Use the Mix-In function to fold in toasted mini marshmallows and crushed graham crackers. Mix until the marshmallows and graham crumbs are evenly distributed.
  3. Top with an extra toasted marshmallow and serve right away. Add it at the end so it stays lightly toasted.

Notes

For the smoothest churn, blend until the mixture looks glossy and uniform, with no cream cheese streaks. Storage: cover and freeze for up to 2 weeks, then re-process on the Ice Cream setting if needed. Freezer yes, but texture may harden—expect a softer mix after re-spinning. Dietary swap: use a dairy-free heavy cream and cream cheese substitute for a dairy-free version (blend as directed, then freeze).
