Cook the ranch chicken
- Season the thin-sliced chicken with half of the ranch seasoning packet. Heat olive oil in a skillet over medium-high and cook the chicken for 4–5 minutes per side until cooked through.
- Transfer the cooked chicken to a plate to rest briefly, then slice or pull it into bite-size pieces. Keep any juices in the chicken for better flavor.
Crisp and melt the tortillas
- Fold each flour tortilla in half. Griddle in a dry skillet over medium heat until crispy on both sides and cheddar melts inside, 30–60 seconds per side depending on tortilla thickness.
Assemble the tacos
- Fill each crispy taco shell with ranch chicken, crumbled bacon, shredded romaine, halved cherry tomatoes, and diced red onion.
- Drizzle with ranch dressing and dust with the remaining ranch seasoning for a final, punchy finish.
Notes
Pro tip: shred cheddar finely so it melts quickly inside the griddled tortilla without tearing it. Store cooked chicken and toppings separately in the fridge for up to 3 days; assemble just before serving for best crunch. Freezing is not recommended for the fully assembled tacos; freeze chicken only up to 2 months, then reheat and reassemble. For a lighter option, use turkey bacon and reduced-fat ranch dressing while keeping the same seasoning mix.
