Ingredients

For fudgy brownies
  • 1 cup unsalted butter
  • 8 oz dark chocolate
  • 1.5 cup sugar
  • 4 eggs
  • 2 tsp vanilla
  • 1.25 cup flour
  • 0.5 cup cocoa
  • 0.5 tsp salt
For turtle topping
  • 0.5 cup thick caramel sauce
  • 1.5 cup pecan halves toasted
  • 0.5 cup semi-sweet chocolate chips melted for drizzle
  • 0.1 flaky sea salt to taste

Equipment

  • 1 sheet pan

Method

Preheat and prepare the pan
  1. Preheat oven to 350F. Line a 9x13 pan with parchment.
Melt and mix the brownie batter
  1. Melt the butter and dark chocolate together, then cool slightly. Whisk in the sugar, eggs, and vanilla until smooth.
  2. Fold in the flour, cocoa, and salt just until no dry streaks remain. The batter should look thick and glossy.
Assemble and swirl
  1. Spread the batter evenly in the prepared pan. Drizzle the thick caramel sauce over the top and swirl with a knife.
  2. Press the toasted pecan halves across the surface. Keep them in an even layer so every brownie gets a bite of nuts.
Bake
  1. Bake for 28-32 minutes at 350F until set with moist crumbs. The center should no longer look wet, but it should stay soft.
Finish and serve
  1. Cool completely so the brownies can set firmly. Drizzle the melted semi-sweet chocolate over the cooled surface.
  2. Sprinkle flaky sea salt over the top. Slice and serve once the caramel has firmed up.

Notes

For the cleanest caramel swirls, drizzle the caramel in a thin ribbon and make only a few gentle knife passes. Store airtight in the refrigerator up to 5 days; warm individual squares for 10-15 seconds in the microwave. Freeze brownies for up to 2 months—thaw overnight in the fridge. For a lower-sugar option, replace up to half the sugar with a 1:1 baking sweetener, noting the texture may be slightly softer.
