Taco Soup With Ranch Packet

Taco soup with ranch packet is a Tex-Mex main dish where ground beef, beans, and corn simmer with taco seasoning and ranch dressing mix for a bold, creamy-leaning flavor. The broth thickens slightly as it simmers 15–20 minutes, making it perfect for topping with cheddar, sour cream, tortilla chips, and green onions.

Ingredients

Soup base
  • 1 lb ground beef
  • 1 onion, diced
  • 1 can (15 oz) black beans, drained
  • 1 can (15 oz) kidney beans, drained
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) Rotel tomatoes
  • 1 can (14 oz) diced tomatoes
  • 1 packet (1 oz) taco seasoning
  • 1 packet (1 oz) Hidden Valley Ranch dressing mix
  • 4 cup beef broth
Toppings
  • 0.5 cup shredded cheddar
  • 0.5 cup sour cream
  • 1 cup tortilla chips
  • 0.25 cup green onions
  • 0.25 jalapeños

Equipment

  • 1 Dutch oven

Method

Brown the beef
  1. Brown ground beef in a large Dutch oven over medium-high heat and drain the fat.
  2. Add diced onion and cook for 3 minutes, stirring, until softened.
Simmer the soup
  1. Pour in all canned ingredients and sprinkle both the taco seasoning and Hidden Valley Ranch dressing mix over the top.
  2. Add beef broth and stir everything together so the spices dissolve.
  3. Bring to a boil, then reduce to a simmer and cook for 15-20 minutes, until the flavors meld and the broth thickens slightly.
Finish and serve
  1. Taste and add salt only if needed, since both packets are salty.
  2. Serve hot with shredded cheddar, sour cream, tortilla chips, green onions, and jalapeños.

Notes

Pro tip: simmer uncovered for the full 15–20 minutes to concentrate flavor and slightly thicken the broth. Refrigerate leftovers in an airtight container up to 4 days; reheat gently on the stove or microwave until hot. Freezing is yes—freeze up to 3 months, then thaw and reheat, adding a splash of broth if needed. For a lighter option, use 93% lean ground beef or substitute ground turkey while keeping the same ranch packet and taco seasoning.
