Red pepper flakes
  • 0.5 tsp red pepper flakes
Ditalini or egg noodles
  • 8 oz ditalini or egg noodles
Fresh spinach
  • 2 cup fresh spinach
Parmesan
  • 0.25 cup parmesan for garnish
Fresh basil
  • 0.25 cup fresh basil for garnish
Salt
  • 1 salt to taste
Black pepper
  • 1 black pepper to taste

Equipment

  • 1 cast iron skillet

Method

Cook the soup base
  1. Add the chicken thighs, carrots, celery, onion, garlic, diced tomatoes, cannellini beans, chicken broth, Italian seasoning, dried basil, and red pepper flakes to the slow cooker. Stir so the seasonings are evenly distributed.
  2. Cover and cook on Low for 6-8 hours, until the chicken is cooked through and the broth looks richly infused with tomato. (Or cook on High for 3-4 hours.)
Shred and finish
  1. Remove the chicken, shred it, and return the shredded chicken to the pot. The soup should look thick and flavorful after the chicken goes back in.
  2. Add the ditalini (or egg noodles) and cook on High for 20-30 minutes, until the noodles are tender and the broth stays active with small bubbles. Stir occasionally to prevent sticking.
  3. Stir in the fresh spinach and cook for 5 minutes, until it wilts and turns bright green. You should see the spinach evenly dispersed throughout the soup.
  4. Season with salt and black pepper to taste, then ladle into bowls. Top each serving with parmesan shavings and fresh basil.

Notes

Tip: Add the noodles during the last 20-30 minutes so they cook through without turning soft. Store leftovers in the refrigerator for up to 4 days; reheat gently on the stove or in the microwave. Freezing is not recommended for the best noodle texture, but you can freeze the soup base (without noodles and spinach) for up to 2 months and add fresh noodles when reheating. For a lighter option, use low-sodium chicken broth and reduce-added salt to taste.
