Ingredients

Acorn squash
  • 2 acorn squash Halved, seeded, and sliced into 1/2-inch rings.
Olive oil and aromatics
  • 3 tbsp olive oil
  • 2 garlic Minced.
  • 1 tsp fresh thyme leaves
  • 1 tsp fresh rosemary Chopped.
Seasoning and cheese
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 cup grated Parmesan Grated Parmesan for sprinkling.

Equipment

  • 1 sheet pan

Method

Prep and season
  1. Preheat oven to 400F and line a sheet pan with parchment (visual cue: parchment covers the whole pan to prevent sticking).
  2. Toss acorn squash rings with olive oil, minced garlic, fresh thyme leaves, chopped rosemary, salt, and black pepper (visual cue: each ring looks evenly glossy and coated).
Roast and crisp
  1. Arrange squash in a single layer and roast for 20 minutes at 400F (visual cue: edges start to bronze).
  2. Flip the slices and sprinkle generously with grated Parmesan (visual cue: Parmesan forms a visible, even layer).
  3. Roast 12-15 minutes more at 400F until tender and Parmesan is golden and crisp (visual cue: you see caramelized spots and crisp, browned cheese).

Notes

For the crispiest Parmesan topping, keep the squash in a single layer with space between rings so moisture can escape during roasting. Store leftovers in the refrigerator up to 3 days in an airtight container; reheat in a 400F oven for 8-10 minutes to re-crisp. Freezing is not recommended as the texture can soften after thawing. For a dairy-reduced swap, use a Parmesan-style hard cheese made from lactose-free or plant-based ingredients (choose one that melts and browns).
