Ingredients
  

Dairy-free pineapple base
  • 1 cup pineapple juice or crushed pineapple Use drained crushed pineapple if using canned.
  • 0.5 cup coconut cream or coconut milk Choose full-fat for the creamiest texture.
  • 2 tbsp sugar or agave Adjust sweetness to taste; agave dissolves easily.
  • 1 tbsp lemon juice Adds tang and balances the pineapple.
  • 0.25 tsp vanilla extract Enhances the classic soft-serve flavor.
  • 0.25 tsp salt Use a pinch; helps the flavor pop.

Method
 

Blend into a smooth pineapple mixture
  1. Blend pineapple juice or crushed pineapple with coconut cream or coconut milk, sugar or agave, lemon juice, vanilla extract, and salt until completely smooth, with no visible pineapple bits.
Freeze
  1. Pour the mixture into the Ninja Creami pint container and freeze for 24 hours until solid.
Process into soft serve
  1. Process on the Sorbet or Lite Ice Cream setting to form a thick, swirlable soft serve texture.
  2. If the texture is too firm, add 1 tablespoon pineapple juice and re-spin until it reaches a smooth, pipeable consistency.
Serve
  1. Transfer the soft serve to a piping bag and pipe into cups for a classic Dole Whip swirl, or serve directly from the pint.

Notes

For best results, use full-fat coconut cream or coconut milk and freeze the pint until fully solid (about 24 hours). Keep leftovers in the freezer in a sealed container for up to 2 days; re-process with a quick re-spin if it firms up. Freezing does not hold the swirl texture as well as fresh churned, but it’s still tasty. For a more dairy-free, low-sugar option, replace sugar with agave and keep lemon juice the same for balance.
