Ingredients
  

Chicken breasts
  • 4 boneless skinless chicken breasts Use evenly thick breasts for consistent cooking.
  • 0.25 tsp Salt Season to taste.
  • 0.25 tsp pepper Season to taste.
  • 0.5 tsp garlic powder Season to taste.
  • 0.5 tsp smoked paprika Season to taste.
BBQ and bacon topping
  • 2 tbsp olive oil
  • 0.5 cup BBQ sauce Divide the sauce; use half for marinating and the rest for topping.
  • 8 bacon Cook until crispy; then use 2 strips per breast.
  • 1 onion Thinly sliced and caramelized.
Cheese and garnish
  • 1 tbsp butter Use for caramelizing the onions.
  • 2 cup Monterey Jack cheese Shred for best melt.
  • 0.25 cup diced tomatoes For garnish.
  • 2 tbsp fresh chives For garnish.

Method
 

Season and marinate
  1. Season the chicken breasts with salt, pepper, garlic powder, and smoked paprika, then brush with half of the BBQ sauce. Let marinate for 10 minutes so the flavor penetrates.
Sear the chicken
  1. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken for 4-5 minutes per side until golden and cooked through to 165°F.
Top and broil
  1. Brush each breast with the remaining BBQ sauce, then top with caramelized onions and 2 strips of bacon per breast. Spread everything so it stays covered for even melting.
  2. Pile Monterey Jack cheese generously over each breast. Broil for 2-3 minutes until the cheese is fully melted, bubbly, and golden in spots.
Garnish and serve
  1. Garnish with diced tomatoes and fresh chives, then serve immediately. Keep the chicken hot so the cheese stays stretchy and bubbly.

Notes

For the best caramelized onions, cook them in butter until deep golden and slightly jammy before topping the chicken. Refrigerate leftovers in an airtight container for up to 3 days; reheat gently in a skillet or microwave until hot. Freezing isn’t recommended because the BBQ sauce and cheese texture can break down. Dietary swap: use turkey bacon and a dairy-free Monterey Jack-style shreds (or omit cheese and add extra sauce) for a lighter option while keeping the BBQ-bacon vibe.
