Ingredients
  

Blackberry swirl
  • 2 cup fresh blackberries
  • 0.5 cup granulated sugar divided
  • 1 tbsp lemon juice
Ice cream base
  • 2 cup heavy cream
  • 1 cup whole milk
  • 4 egg yolks
  • 1 tsp vanilla extract
  • 0.25 tsp salt
Oat crisp
  • 0.5 cup oats
  • 0.25 cup flour
  • 3 tbsp butter
  • 2 tbsp brown sugar

Method
 

Simmer blackberry compote
  1. Simmer fresh blackberries with 1/4 cup granulated sugar and lemon juice for 8 minutes, stirring until jammy and thick. Cool the compote, leaving some whole berries for a chunky swirl.
Bake the oat crisp
  1. Preheat oven to 350°F, then mix oats, flour, butter, and brown sugar into crumbles. Spread on a sheet pan and bake 12 to 15 minutes until golden, then cool completely and break apart into crunchy pieces.
Cook and chill the custard
  1. Heat heavy cream and whole milk until steaming. Whisk into egg yolks beaten with the remaining 1/4 cup granulated sugar, then cook until the custard reaches 175°F.
  2. Strain the custard, then stir in vanilla extract and salt. Cool to room temperature and refrigerate for 4 hours until well chilled.
Churn, fold, and freeze
  1. Churn the chilled custard in an ice cream maker according to manufacturer directions until it thickens like soft-serve. When transferring to a container, layer blackberry compote and oat crisp pieces throughout.
  2. Freeze until firm, at least several hours, so the texture sets into scoopable ice cream.

Notes

For the cleanest swirl, keep the blackberry compote cool but not icy before layering, and let the oat crisp cool fully so it stays crunchy. Store covered in the freezer for up to 2 months; thaw in the fridge 10 minutes for easier scooping. Freezing is yes—do not refreeze after serving if left out too long. For a lighter option, swap whole milk for 2% milk; texture will be slightly less rich but still creamy.
