Method
 

Blend until completely smooth
  1. Add full-fat cottage cheese, caramel sauce, brown sugar, vanilla extract, sea salt, and cream cheese (if using) to a stand mixer and blend on high for at least 2 minutes until completely smooth with no lumps.
  2. Stop and taste, then adjust caramel or salt level until the flavor is balanced and sweet-salty to your preference.
Freeze
  1. Pour the mixture into a freezer-safe container, cover, and freeze for 4 hours until firm.
Serve
  1. Remove from the freezer and let sit for 5 minutes to soften slightly before scooping.
  2. Drizzle with extra caramel sauce and finish with a pinch of flaky sea salt right before serving.

Notes

For the smoothest texture, blend until the mix looks glossy and uniform—any cottage cheese lumps will show up in the final scoop. Store covered in the freezer up to 2 weeks; let sit 5–10 minutes before serving for easier scooping. Freezing works well; no separate thawing needed. For a lower-calorie swap, use reduced-fat cottage cheese and consider adding 1–2 teaspoons extra caramel sauce to keep the caramel-forward flavor.
