Coat the chicken
- Toss the chicken with cornstarch, flour, salt, pepper, and garlic powder until evenly coated, with every piece showing a light, dry coating.
- Marinate the coated chicken for 20 minutes so the breading adheres better; refrigerate during the rest.
Fry until crisp
- Heat about 1/2 inch of vegetable oil in a cast iron skillet to 375°F, until the oil shimmers.

Make the firecracker sauce and glaze
- Combine hot sauce, brown sugar, butter, apple cider vinegar, soy sauce, garlic powder, and red pepper flakes in a saucepan over medium heat and stir until the butter melts and the sauce turns smooth and glossy, about 2-3 minutes.
- Toss the crispy chicken in the firecracker sauce until every piece is fully coated, then add it back to the pan for 1-2 minutes to caramelize and set the glaze.
Serve
- Serve firecracker chicken over steamed rice, with sesame seeds and sliced green onions scattered on top so the red-orange sauce clings visibly to every bite.

Pro tip: Fry in small batches so the oil temperature stays near 375°F for maximum crunch. Refrigerate leftovers in an airtight container up to 3 days; reheat in a hot oven or skillet to re-crisp. Freezing isn’t recommended because the coating softens after thawing. For a lower-sugar option, use half the brown sugar or a sugar substitute that caramelizes similarly (to keep the sticky glaze texture).
