Ingredients

Cranberries
  • 12 oz fresh cranberries
Apples and aromatics
  • 2 apples peeled and diced
  • 1 red onion small, finely diced
  • 1 tbsp fresh ginger grated
Sweetener and dried fruit
  • 0.5 cup golden raisins
  • 0.75 cup brown sugar packed
Liquid and seasonings
  • 0.5 cup apple cider vinegar
  • 0.5 cup water
  • 1 tsp ground cinnamon
  • 0.5 tsp ground cloves
  • 0.25 tsp red pepper flakes
  • 0.5 tsp salt

Equipment

  • 1 cast iron skillet

Method

Boil the base
  1. Combine brown sugar, apple cider vinegar, and water in a saucepan; bring to a boil, then keep it at a steady boil for even dissolving.
  2. Add red onion, fresh ginger, ground cinnamon, ground cloves, red pepper flakes, and salt; simmer for 5 minutes so the spices bloom and the onion softens, stirring once or twice.
Simmer until jammy
  1. Stir in fresh cranberries, diced apples, and golden raisins; return to a gentle simmer so the fruit cooks through.
  2. Simmer 20-25 minutes, stirring often, until the chutney is thick and jammy and most cranberries have burst.
Cool and chill
  1. Cool the chutney completely to room temperature so it thickens as it sets, then transfer to clean containers.
  2. Refrigerate until ready to serve; spoon over turkey, pork, or alongside a cheese board.

Notes

Pro tip: Stir more frequently during the last 10 minutes to prevent scorching on the bottom as the chutney thickens. Store refrigerated in a sealed container for up to 10 days; for longer storage, freeze up to 2 months and thaw in the fridge. If you want it less sweet, reduce brown sugar by 1 to 2 tablespoons and simmer an extra 5 minutes to reach the same jammy texture.
