Method
Boil the base
- Combine brown sugar, apple cider vinegar, and water in a saucepan; bring to a boil, then keep it at a steady boil for even dissolving.
- Add red onion, fresh ginger, ground cinnamon, ground cloves, red pepper flakes, and salt; simmer for 5 minutes so the spices bloom and the onion softens, stirring once or twice.
Simmer until jammy
- Stir in fresh cranberries, diced apples, and golden raisins; return to a gentle simmer so the fruit cooks through.
- Simmer 20-25 minutes, stirring often, until the chutney is thick and jammy and most cranberries have burst.
Cool and chill
- Cool the chutney completely to room temperature so it thickens as it sets, then transfer to clean containers.
- Refrigerate until ready to serve; spoon over turkey, pork, or alongside a cheese board.
Notes
Pro tip: Stir more frequently during the last 10 minutes to prevent scorching on the bottom as the chutney thickens. Store refrigerated in a sealed container for up to 10 days; for longer storage, freeze up to 2 months and thaw in the fridge. If you want it less sweet, reduce brown sugar by 1 to 2 tablespoons and simmer an extra 5 minutes to reach the same jammy texture.
