  • 1 cup full-fat cottage cheese
  • 1 cup frozen pineapple chunks
  • 2 tablespoons honey or agave
  • 1 tablespoons lemon juice
  • 0.25 teaspoons vanilla extract
  • 1 salt

Method
 

Blend into silky pineapple soft serve
  1. Add full-fat cottage cheese, frozen pineapple chunks, honey (or agave), lemon juice, vanilla extract, and salt to a high-powered blender, then blend until completely smooth, scraping down the sides as needed. Blend for at least 2 minutes to achieve a silky texture with no cottage cheese lumps.
  2. Stop the blender, taste, and adjust sweetness as desired by adding a little more honey (or agave) if needed. Blend briefly again just to fully incorporate any adjustment.
Pipe and serve
  1. Transfer the mixture to a piping bag fitted with a star tip and pipe into cups to form a classic Dole Whip swirl. Serve immediately for the creamiest soft-serve texture.

Notes

For the smoothest result, keep the pineapple chunks frozen and blend continuously for at least 2 minutes until completely lump-free. Eat right away; it thickens as it sits in the piping bag. Refrigerate leftovers up to 2 days (it will firm slightly), or freeze in a sealed container up to 1 month and re-blend briefly to restore the soft-serve texture. For a dairy-light option, use low-fat cottage cheese (texture may be slightly less creamy).
