Cook the chicken and reserve broth
- Simmer the chicken in the chicken broth with the taco seasoning for 18-20 minutes until cooked through, then remove the chicken to shred and set aside. Keep the broth in the pot so it can be reused as the soup base.
Build the soup base
- Return the seasoned broth to the pot, then add the diced onion, minced garlic, ranch dressing mix, black beans, corn, Rotel tomatoes, and diced tomatoes. Stir until everything is combined.
- Bring the soup to a boil, then simmer for 10 minutes to meld the flavors and thicken slightly. You should see steady bubbling across the surface.
Finish and serve
- Return the shredded chicken to the pot and stir in the cream cheese if using, cooking until melted. Continue stirring until the broth looks smooth and creamy.
- Season with salt and pepper to taste, then serve immediately with shredded cheddar, sour cream, tortilla chips, lime wedges, and cilantro. Add toppings last so the tortilla chips stay crisp.

Pro tip: shred the chicken while it’s warm so it pulls into fluffy strands that stay suspended in the broth. Store leftovers in the refrigerator up to 4 days; reheat gently on the stove so the cream cheese doesn’t break. Freezing is not ideal because dairy can change texture, but you can freeze the soup base (without sour cream/cheddar) for up to 2 months and add toppings after reheating. For a lighter option, use reduced-fat cream cheese or skip it for a broth-forward version.
