Whip and combine
- Whip the heavy cream in a stand mixer on medium-high until stiff peaks form, about 3-5 minutes; the mixture should hold a sharp peak when you lift the whisk.
- In a separate bowl, whisk the sweetened condensed milk, vanilla extract, and salt until smooth, then fold it into the whipped cream just until no streaks remain; keep the texture airy.
Layer and swirl
- Layer half the ice cream base into a 9x5 loaf pan, spreading it into an even layer with a visible top surface.
- Scatter half the brownie chunks over the base, then drizzle half the caramel sauce in thin ribbons so it slightly pools on top.
- Add the remaining ice cream base, then scatter the remaining brownie chunks and drizzle the remaining caramel sauce.
- Swirl gently with a knife through the top layer, moving in wide arcs so you see caramel streaks and brownie bits through the cream.
- Drizzle extra caramel on top and do not over-swirl; leave a few distinct caramel ribbons for visual contrast.
Freeze
- Freeze the loaf pan for at least 6 hours or overnight, until firm enough to scoop; cover once set to prevent ice crystals.
Notes
For cleaner slices, let the frozen loaf sit at room temperature for 5-8 minutes before scooping. Store covered in the freezer for up to 2 months; no need to thaw for serving beyond the short rest. Freezing works well—do not refrigerate after freezing. Dietary swap: use a lactose-free heavy cream and lactose-free condensed milk if you need lactose-free (texture may be slightly softer).
