Ingredients

Cranberry sauce base
  • 12 oz fresh cranberries
  • 0.75 cup sugar
  • 0.5 cup ruby port or red wine
  • 0.25 cup orange juice
  • 2 tbsp Grand Marnier or orange liqueur
  • 1 cinnamon stick cinnamon stick
  • 1 tsp orange zest
  • 0.06 pinch salt

Equipment

  • 1 Dutch oven

Method

Simmer the sauce
  1. Combine sugar, ruby port or red wine, orange juice, cinnamon stick, and salt in a saucepan, then set it over medium-high heat until boiling. You should see active bubbling across the surface as the sugar dissolves.
  2. Add fresh cranberries to the boiling mixture and simmer for 10-12 minutes, stirring occasionally, until the berries burst and the sauce thickens. The sauce should look glossy and slightly jammy with visible berry skins bursting open.
Finish and chill
  1. Remove the saucepan from the heat and stir in Grand Marnier or orange liqueur and orange zest. The color should deepen and the surface should look shiny.
  2. Discard the cinnamon stick. Make sure no pieces remain in the sauce before cooling.
  3. Cool the sauce to room temperature, then chill before serving. The texture will thicken further as it cools.

Notes

For the best texture, simmer just until the berries burst and the sauce coats a spoon, then stop cooking so it doesn’t become overly thick after chilling. Store covered in the refrigerator for up to 5 days; freeze in an airtight container for up to 2 months and thaw overnight in the fridge. For a lower-alcohol option, use cranberry juice plus an extra splash of orange juice in place of the ruby port and omit the liqueur at the finish.
