Ingredients

Cranberry sauce
  • 12 oz fresh cranberries
  • 0.75 cup granulated sugar
  • 0.25 cup brown sugar, packed
  • 0.75 cup orange juice
  • 0.25 cup water
  • 1 count cinnamon stick
  • 1 tsp orange zest
  • 0.125 salt pinch
  • 1 tsp vanilla extract

Equipment

  • 1 Dutch oven

Method

Cook the base
  1. Combine granulated sugar, brown sugar, orange juice, water, cinnamon stick, and salt in a saucepan over medium-high heat. Bring to a boil while stirring until the sugar dissolves, about 2 minutes, with a steady rolling bubble across the surface.
Simmer until thick
  1. Add fresh cranberries to the boiling syrup and return to a boil. Once boiling, reduce heat and simmer at a gentle boil for 10-12 minutes, stirring often, until most berries burst and the sauce thickens to a spoon-coating consistency.
Finish and chill
  1. Remove the saucepan from the heat and stir in orange zest and vanilla extract. Discard the cinnamon stick, then cool to room temperature for 30-60 minutes until no longer hot.
Set the texture
  1. Chill the cranberry sauce until it thickens further, at least 2 hours, covering the surface to prevent a skin from forming. The sauce should become glossy and sliceable when served.

Notes

For the best texture, stir frequently during the 10-12 minute simmer so the sugars dissolve evenly and the berries burst without scorching. Refrigerate in a covered container up to 7 days; freeze for up to 2 months for longer storage. For a lower-sugar swap, use a 1:1 sugar substitute designed for cooking and follow package guidance for thickening.
