Ingredients

Potato soup base
  • 3 lb russet potatoes
  • 1 onion
  • 4 garlic cloves minced
  • 6 bacon strips diced
  • 4 cup chicken broth
  • 3 tbsp all-purpose flour
  • 1 cup heavy cream
  • 0.5 cup sour cream
  • 1.5 cup shredded cheddar
  • 0.25 salt to taste
  • 0.25 black pepper to taste
  • 0.25 garlic powder to taste

Equipment

  • 1 Dutch oven

Method

Cook bacon and sauté aromatics
  1. Cook the diced bacon in a large heavy-bottomed pot until crispy, then remove and set aside.
  2. Sauté the diced onion in the bacon drippings for 4 minutes, then add the minced garlic and cook for 1 minute.
Thicken and simmer the potatoes
  1. Whisk in the all-purpose flour and cook for 1-2 minutes, then pour in the chicken broth.
  2. Add the cubed russet potatoes, bring to a boil, then reduce heat and simmer for 18-20 minutes until tender.
Mash, finish, and season
  1. Mash the potatoes to your desired consistency directly in the pot.
  2. Stir in the heavy cream and sour cream until smooth and creamy.
  3. Add the shredded cheddar and stir until melted, then season with salt, black pepper, and garlic powder to taste.
Serve
  1. Serve immediately topped with the crispy bacon and any desired toppings.

Notes

For the thickest soup, mash about half the potatoes and leave the rest chunky for a hearty texture. Store leftovers in an airtight container in the refrigerator up to 4 days; reheat gently over low heat, adding a splash of broth if needed. Freezing is not recommended because cream-based soups can break, but you can freeze the base before adding cheddar and cream, then thaw and reheat while stirring in the dairy.
