  • 2 cup shredded cheddar cheese Use for a creamy, cheesy finish.
Bacon and topping
  • 8 strips bacon Cooked and crumbled; reserve some for topping.
  • 3 green onions Sliced; reserve extra for topping.}

Equipment

  • 1 slow cooker

Method

Combine in the slow cooker
  1. Add cubed russet potatoes, chicken broth, ranch seasoning mix, garlic powder, and black pepper to the slow cooker and stir to combine, making sure the potatoes are evenly coated.
Slow cook until tender
  1. Cook on Low for 6-7 hours or on High for 3-4 hours until the potatoes are very tender and easily mashable.
Mash and melt the cream cheese
  1. Mash the potatoes with a potato masher to your desired consistency, leaving some chunks if you prefer a rustic texture.
Finish creamy with cheese and sour cream
  1. Stir in the cubed cream cheese until fully melted and incorporated, smoothing out any remaining lumps.
Smooth and add cheddar
  1. Stir in the sour cream and shredded cheddar cheese until smooth and fully combined.
Add bacon and serve
  1. Fold in most of the crumbled bacon, reserving a little for topping so it stays visibly sprinkled on top.
Top and serve
  1. Serve hot with extra cheddar, reserved bacon, and sliced green onions piled over each bowl.

Notes

For the creamiest texture, cube the cream cheese and mash only after the potatoes are fully tender; if it’s too thick, loosen with a splash of chicken broth before serving. Refrigerate leftovers in a sealed container for up to 4 days; freeze for up to 2 months. For a lighter option, use reduced-fat cream cheese and sour cream (texture stays thick, but calories drop).
